1 volt is defined as 1 joule per electric charge of 1 Columb.It's the unit of potential difference, now u may have a doubt, what is potential difference, its the difference in the potential between 2 ends of a wire which we set so that electrons will start their motion towards the one which is more positive, well now what is 1v, it is the amount of work done in moving electrons from one end of the wire to the other end. Maybe it's not 100% correct, but I hope u can understand what is meant by that..
