Rancidity :

The conditions produced by aerial oxidator of fats and oils in foods marked by unpleasant smell and taste is termed as rancidity.

Substances added are called antioxidant. e.g. N2. Nitrogen is added because it is chemically inert and prevents the oxidation of food items.

Two measures :

  • Keeping them in a closed/air tight containers.
  • Flush the bags of food items with nitrogen to prevent oxidation.
