When Sulphur dioxide i.e. (SO2) passes through lime water a new chemical is formed.
This new substance formed is calcium sulphite (white ppt.).
This then reacts with excess of SO2 to form a new substance called Calcium hydrogen sulphite.
When this whole process is carried out it is done under a certain temperature so as to get the exact result.
