These are the types of emulsions (colloidal mixture of two or more immiscible liquids). Here the term 'oil' is used for any liquid which is immiscible with water and is capable of forming an emulsion with water.

In the emulsion of oil in water, oil is the dispersed phase and water is the dispersion medium.

For example : milk, vanishing cream. Here milk is an emulsion of liquid fat dispersed in oil.

In the emulsion of water in oil, water is the dispersed phase and oil is the dispersion medium.

For example : cod liver oil, butter and cold cream.
