Plane stress assumes the stress distribution through the thickness of a 2D model is zero (sigma z). Contrary to thinking, there IS a strain in the z direction due to the poisson effect. This assumption is best suited for thin models example a flat plate etc.

Plane strain assumes that the strain in the thickness or z direction of a 2D model is zero. By examining Hooke's Law in 3 dimensions, you WILL obtain a stress in the z direction. This assumption is best suited for geometries with thick cross-section.

If you are not sure which assumption to use, I suggest doing a pre-analysis, i.e obtain an analytical solution to a model and compare it to the same model solved in your FEA software. This will establish confidence in your ffinal analysed model.
