It is a unitless quantity. Because it is one quantity divided by another quantity of the same units.
In fact, even the parent quantities that define Poisson's ratio are unitless. Strain has no units. Maybe you like to express it as a percent...but you don't really need to.

It is a ratio of transverse contraction strain to longitudinal exrention strain in the direction of stretching force..
