Hey mate, here is your answer.
Principle : The liquids which are denser forms the lower layer and the less denser liquids forms the upper layer.
[As different liquids have different densities]
During separation of iron from it's ore lighter slag is removed from the top by this method leaving the molten iron at the bottom of the furnace.

Different liquids have different densities so they separates out and forms different layers.
