Mining - Suppose coal is present at depth of 1000ft. So, in order to remove coal from subsurface what we do is remove the overburden strata or the matrix present above coal. This process is called mining. Mostly Solids like Coal, Metals etc are retrieved from subsurface in case of mining.

Drilling - Suppose Hydrocarbons are present in pore spaces of sandstone or limestone at subsurface. In order to retrieve them to surface instead of mining we go for drilling operations. As in this case liquids can be easily produced to surface because of High pressure (Due to overburden stress). Here we can also go for mining but it's not economical to the companies. So they prefer for Drilling.
