When oil foods are exposed to air they get oxidised and release a foul smell.. This phenomenon is called rancidity.

Rancidity is a term generally used to denote unpleasant odours and flavours in foods resulting from deterioration in the fat or oil portion of a food. Three different mechanisms of rancidity may occur. These are oxidative, hydrolytic, and ketonic. Oxidative Rancidity.
And here is the measures by which u can prevent rancidity
1.) we can pack the oily substance in air tight containers
2.) we can also fill nitrogen in the packet...which is filled in chips..
