When food is kept outside in air for long time, it starts losing its fats and oils which results in unpleasant smell and taste. This due to the oxidation of food coming in contact with air. This process of losing fats and oils due to oxidation is called rancidity.
Example: We have often noticed that when keep fried chips outside for a long time it starts giving unpleasant smell and taste,this is due to rancidity. That is why chips are packed in the packets with the non-reactive gas known as nitrogen. This prevents the food to come in direct contact with air.

Precautions:
1) To prevent oxidation of food, store the food in an airtight container, this keeps the food fresh for a long time.

2) We can also store food in refrigerator to keep it fresh for a long time.

3) Rancidity can be prevented by adding anti-oxidants like BHA (Butylated Hydroxy- Toluene) to foods containing fats and oils.

4) Rancidity van be prevented by packaging fat and oil containing foods in nitrogen gas.

5) Rancidity can be prevented by storing food away from light.

The oxidation of fats and oil is called Rancidity, which changes their smell and taste. Example - Pickle,pizza etc
Precaution -1 add vinegar in pickle,
jam,ketchup,pizza,etc
2 put the food items in refrigeraters
