what is rancidity? how can we prevent it?
When fats n oils are oxidized they get rancid ie- their smell n taste changes...
Rancidity can be prevented by adding antioxidants, refrigeration etc...

- avoid to keep food directly to the sunlight
- preserve it at very low temperature .
- addition of antioxidants.
- place it under the access of nitrogen gas .
