: It is defined as chemical decomposition of oils and fats which in another words is spoiling food materials that difficult for consumption.
It can be prevented by following methods:
(i) The packing of food materials should be replaced the air with Nitrogen.
(ii) The food materials should be placed at very low temperatures.
(iii) Addition of antioxidants also prevents rancidity process.

ranciduty meaans the food prepared using unsaturated fat nd oil if keep in open after some time microorgansim begin in it nd it give unpleasnt smeel nd taste ....
