It is a chemical decomposition of fats and oils which are present in our food.
it can be reduced by following methods:-
* you should pack the food materials fulled with Nitrogen gas
* we can also add some antioxidants to check rancidity
* if you place the food material at low temperature there then there will low risk of food to be rancid.
