Oxidation of fats, generally known as rancidity, iscaused by a biochemical reaction between fatsand oxygen. In this process the long-chain fatty acids are degraded and short-chain compounds are formed. One of the reaction products is butyric acid, which causes the typical rancidtaste.

rancidity is the change in the smell and taste of food particles due to the reaction with atmospheric oxygen.

this is caused becuz oxygen reacts with the fat present in the food material and causes the taste and smell to change.

it can prolonged that is prevented by :

1) keeping the food in airtight boxes.

2) chips packets are usually flushed with nitrogen gas which acts as an anti oxidant.
