Explanation:

Rancidity generally is the complete or incomplete oxidation or hydrolysis of fats and oils when exposed to air, light, or moisture or by bacterial action, resulting in unpleasant taste and odor.

For example, iron, in the presence of moisture, reacts with oxygen to form hydrated iron oxide. Rancidity is the process of oxidation of fats and oils that can be easily noticed by the change in taste and smell is known as rancidity. For example, the taste and smell of butter changes when kept for long.

Oxidative rancidity is associated with the degradation by oxygen in the air. The double bonds of an unsaturated fatty acid can be cleaved by free-radical reactions involving molecular oxygen. This reaction causes the release of malodorous and highly volatile aldehydes and ketones.

Rancidity can be prevented using the following methods:

1:-Adding antioxidants (substances which prevent oxidation) to food.

2:-Storing food in airtight containers to slow the process of rancidification.

3:-Refrigerating food also helps to slow down rancidification.

4:-Replacing oxygen in the containers with another gas.

HEY FRIEND HERE IS UR ANSWER ,

Rancidity is the oxidation of foods containing fats and oils.

1) Rancidity can be prevented by storing food in vacuum containers.

2) Rancidity can be prevented by adding antioxidants to food.
