Explanation:
When fats and oils are oxidised, they become rancid and their smell and taste change. To prevent rancidity antioxidants (which prevent oxidation) are added to foods containing fats and oils.
It can be prevented by following methods:
(i) The packing of food materials should be replaced the air with Nitrogen.
(ii) The food materials should be placed at very low temperatures.
(iii) Addition of antioxidants also prevents rancidity process.
