Esters react in the presence of an acid or a base to give back alcohol and carboxylic acid. This reaction is used in the manufacture of soaps and is known as saponification. Soap, is nothing but the sodium salt of the carboxylate.

Soaps are sodium or potassium salts of chain fatty acids. When triglycerides in fats/oils react with aqueous NaOH or KOH they are converted into soap and glycerol. This is called alkaline by hydrolysis of esters. Since this reaction leads to the formation of soap, it is called Saponification reaction.
