emulsification breaks down the larger fat molecules into smaller ones, so that the enzyme lipase could act on it to produce fatty acids and glycerol.

Emulisification is the process of breaking down of large fat globules into smaller globules and make them water soluble.... Emulsion of fats increases the efficiency of enzyme action to break down fats into fatty acid and glycerol which is easily absorbed through small intestines.
