what is so special about the leaves that they can synthesise food but other parts of the plant cannot

Leaves are the only plant parts that contains the chlorophyll plastids. As only leaves have chlorophyll, only they can trap sunlight which is most important for the process of photosynthesis. Leaves can absorb carbon dioxide from the air. This is why, only leaves can synthesis food.
