The alkaline hydrolysis of esters is known as saponification.

CH3COOC2H5 + NaOH.......heat........... > CH3COONa + C2H5OH

When sodium hydroxide (caustic soda ) react with ester then it converted back to alcohol and sodium salt of carboxylic acid is called saponification reaction.
in other words,
When the fat or oil reacts with concentrated sodium hydroxide to dorm soap and glycerol it is called saponification reaction
fat or oil +NaOH --> soap + glycerol
heat
C17H35COOCH + 3 NaOH --> 3C17H35COONa (soap) + CH2OH (glycerol)
