Well, a compound is formed by the combination of elements, atoms and molecules. Now these elements, atoms and molecules combine in a particular ratio resulting in the formation of these compounds.
Sometimes due to some reasons, compounds develop defects in them resulting in the alteration of the stoichiometry of these compounds. The compounds so formed are known as non-stoichiometric compounds.
A very common example of such compound is Fe(0.96)O resulting from defects in the compound FeO.
As for stoichiometric ones, those are the compounds which maintain their stoichiometry or simply they maintain the ratio in which they were formed despite having defects in them.
There are many examples of stoichiometric compounds including NaCl, Mgo, Al2O3 etc.
