What is sucrose and why in xylem tranportation take place in upward direction and in phloem take place in downward direction?

in xylem transportation takes place upward as the roots absorb minerals and nutrients from the soil, which is then needed to be transported upwards to other parts of the plant as the upper parts can not absorb water and minerals from soil  ,while phloem transports downwards as the food prepared in the leaves needs to be transported downwards  to others parts of the plant including roots as they cannot make their food
