When you use a pan with a wooden handle, the handle acts as an insulator as wood is a bad conductor of heat and you can easily hold the pan by holding the wooden handle.

If the handle was not made of an insulating material, then you will be unable to hold the pan as the whole pan will be heated up equally.

The handles of cooking utensils are made up of wood because wood is bad conductor of heat.
As it is bad conductor of heat therefore they won't be able to pass the heat of the flame to the person's hand and will prevent the person from burns or any other injuries.
