When starch solution is reacted with acid, hydrolysis occurs.
In order to demonstrate this behavior, iodine is mixed with starch solution so that it turns from white to blue-black color.
Then, an acid ( say, hydrochloric acid) is mixed with this starch-iodine solution and heated.
Process of acid hydrolysis converts starch into glucose. Iodine is separated from its bond.
So, the blue-black color fades out.
