A corpse is usually a dead body, whether that body is an animal or a human does not matter. Corpse, in some cases, can also be another word for cadaver.

Carcass is in a way similar to the word corpse, but usually refers more to animals. Another way carcass differs from corpse is that a carcass is usually carrion, so rotting away and decaying, or perhaps devoured by another animal.

In short: Carcass refers to something that has had it's head and limbs removed and is most of the time stripped of flesh and skeletal.
