What is the difference between a preservative and an antioxidant?

1️⃣First primary difference is antioxidants are not used to preserve food..
2️⃣Preservatives are used to inhibit growth of micro organisms in food thereby helping in preserving food but in case of anti oxidants they prevent oxidation of fats and oils or they just delay the process of oxidation of food materials..
3️⃣Preservatives are used industrially as they are of commercial purposes
4️⃣Similarity between these two is they both extend the shelf life period of food
➡️Preservatives- Sulphites,benzoates,Ascorbic acid
➡️Antioxidants- Citrus sps,beta carotene etc.

preservative means to protect the food against bacteria , yeast and moulds but antioxidants prevent oxidation of fat in processed foods .
ex:- In 20th century people use salt and algae and gelatines to preserve food.
people also use coloured liquid derived from some plants for colouring of some food.
