Agriculture is not a vast field, since it can be carried out individually, as it does actually include personal efforts; everything in agriculture has to start with "your input". This is also why, according to your needs/wants, you can control certain conditions, this is something you do, for your sake, putting your efforts, to carry out certain processes. You take direct advantage, in the case of agriculture, since the processes involved are designed, that you gain your desired advantage, through them. In order to ensure the quality, you have to ensure your process, so usually, its grown for just one purpose, through just one process. Also, the process you carry out, and the results gained through them, is what gains you benefit.

Forestry, is actually a very vast field; since, it has to start with "nature's input". It's just as fishing; no fish, no fishing, so no forests, no forestry. The key point is that forestry actually,  takes advantage out of what is present in nature,  indirectly, you just have to do carry out the processes which aid, in helping you take real "advantage" of what is already out there, you don't have to do anything to get it out there, just have to take it's advantage through minor activities, which forestry consists of. Here, you take already-present advantage (This is also why it's considered a very "vast field"). Nature does everything at first, so the quality is ensured.
