The aldol reaction occurs when you have a carbonyl with a proton on the adjacent (alpha) carbon - an enolisable alpha proton. Under acid or base catalysis, an enol can be formed, which can attack another carbonyl to give a beta-hydroxycarbonyl compound (it’s called an ald-ol reaction because of those two functional groups in the product). The Cannizzaro reaction can happen when there are no enolisable alpha protons. This is a disproportionation reaction, where an aldehyde reacts with another molecule of itself to form an alcohol and a carboxylic acid
