The amount of water displaced by the ship. As you load it, you displace air inside the ship (a gas and relatively speaking not very dense) with solids (relatively speaking much denser - I know how it feels!). Thus, the weight of the ship increases, so it moves lower in the water, displacing a larger volume of water. The upward buoyant force counteracting the weight (gravitational force) by Archimedes principle is the weight of the displaced water, exactly equal to the weight of the ship. Water has a density as a liquid between that of a gas and a solid (approximately 1 gm/cc).
