In yeast incomplete oxidation of glucose occurs by a set of reactions where PYRUVIC ACID is converted into ETHANOL and CO2 by the enzymes PYRUVATE DEHYROGENASE and ALCOHOL DEHYDROGENASE. Here actealdehyde is also formed as an intermediate which undergoes dehydrogenation to form ETHANOL.

In our muscles when the oxygen is inadequate for cellular respiration PYRUVIC ACID is reduced to LACTIC ACID by LACTATE DEHYDROGENASE.
