what is the difference between cells in onion peel and cells in spinach?

The cells in onion are arranged systematically whereas in spinach they won't arrange in a systematical manner

Cells in onion peel are arranged in a certain order and are mostly dead, while the cells of spinach are not arranged and are alive.
