It's easier to notice the differences among men, for women it's harder to tell but still possible if you're familiar enough with them. I successfully guessed Korean tourists in three occasions, though I'm not a fan of Korean stuff, and I've never failed in guessing Koreans at other opportunities. I can't explain how I know a girl in mini market that day was Korean, but for two girls in the bus and a group of tourists in the local restaurant I can. Two girls in the bus, one of them has small lips, small nose, and different eyes shape, while the other just looks like korean artist because of plastic surgery. A group of tourists in the local restaurant, these men were very tall, have muscular body, square face, and again different eyes shape. Several minutes after I thought “they must be Koreans”, they started speaking Korean to one another. I think among the three, Koreans have the most narrow eyes and the brightest skin.

Japanese men are very easy to tell, many of them have bronze skin tone, different eyes shape, lots of facial hair, higher and longer nasal bridge and very cool hairstyle, or if I use the words of my neighbor, they look scary lol. For Japanese women, I can't put into words how I recognize them, yet many of their girls look really beautiful with short-brown hair. Chinese, due to the size of their country, they could have many different appearances, for me they're just East Asians who generally don't look like Japanese or Koreans.

I would like to show pictures of some girls, you may could guess which one is Japanese, Korean, or Chinese.

All images from Google.

EDIT :

Sorry if I disappointed you, but all these girls are Japanese.

These two girls do look Japanese IMO, short-brown hairs really look good on them, they're from Northeast Japan, from Tokyo you need to go further north. Shida Manaka (志田愛佳) & Watanabe Risa (渡邉理佐).
She looks Korean in my eyes, her skin is so bright, her nose and lips are quite small, but yeah she's Japanese from Tokyo, perhaps she's Korean-Japanese. Inoue Sayuri (井上小百合).
The girl in behind, she looks Chinese IMO, I think it's because of her eyes, but yes she's Japanese from Tokyo, she belongs to very rich family, probably she's Chinese-Japanese. The girl in front, same as two girls in the first picture, a Japanese from the Northeast, she looks really great with short-brown hair. Sugai Yuuka (菅井友香) & Moriya Akane (守屋茜).
She looks Japanese in my eyes, her nose is pretty small, but her eyes are big and wide, she's from Tokyo. Ikuta Erika (生田絵梨花). Ikuchan <3
This girl looks Chinese IMO, I can't explain why, but if you're familiar with Chinese you may understand why I think so, she's from Tokyo and maybe she's Chinese-Japanese. Sasaki Kotoko (佐々木琴子).
Just like what I said before, it's harder to tell when it comes to women. However at least when you see a girl who looks really beautiful with short-brown hair, I think it's safe to assume that she's Japanese most likely from the Northeast. All these girls work in entertainment industry, and my favourite is the girl in the fourth photo, I also like three girls with short-brown hair, basically all who look Japanese lol. Sorry if I have to speculate that some of these girls are Korean/Chinese-Japanese, as in Japan during census the government doesn't ask ethnicity, they only record nationality and all these girls are Japanese citizens.
