in sensitive plants like mimosa pudica [touch me not], there is electrical chemical means to convey the information of touch from cell to cell. plants cells change shape by changing the amount of water in them resulting in swelling or shrinking and therefore changing in shapes.
whereas in us the movements are controlled by central nervous system comprising [CNS] comprising of brain and spinal cord, they are facilitated by peripheral nervous system consisting of cranial nerves arising from brain and spinal nerves arising from spinal cord.
