Volatile Acids is that Volatile acids are derived from CO2. While Non-volatile acids are produced during the metabolism of other nutritive substances such as proteins.
Volatility is the tendency of a substance to vaporize. ... Non volatile substances are substances which do not vaporize rapidly. They don't have a higher vapor pressure at the normal room temperature and pressure.
