Volatile is the attribute of a substance that has very high vapor pressure where its molecules can easily escape into the atmosphere, meaning that it can easily turn to vapor(liquid or solid). On the other hand, sublime is the process in which a solid transitions from its solid state to a gaseous state without passing through the liquid state.

Volatile substances are the substances which will rapidly get converted in to its vapour form even at a normal temperature whereas sublime substances will get converted it to its gaseous form without going to the intermediate state called liquid.
