it was in yhe iron age when records/tallies of goods was kept by making different wedge shaped marks in ssoft or wet clay by Hittites. this was different than hieroglyphs. What came next may still be disputed but there have been distinct markings on cave or shallow mine walls that may be the earliest actual symbols that are distinct letters. The writing is in Hebrew and i have seen photographs of very distinct letters, especially the Aleph. The letters morphed a little over time to become more distinct, but after those marks in mud by Hittite bean counters
