Slope of velocity time graph give acceleration of a body in that particular direction.

When graph is straight line then its acceleration is constant and when the straight line is parallel to x-axis then its acceleration is zero.

Graph parallel to y-axis is not possible.

So for variable acceleration graph will be curved in shape.
