7.8 - 8.7 is the optimum pH for the activation of pancreatic enzymes on digestion of proteins.

Explanation:

  • The digestion of protein in small intestine takes place due to the action of pancreatic enzymes on them. The main pancreatic enzyme which helps in the digestion of protein is trypsin.
  • Trypsin is converted from trypsinogen due to the action of enterokinase. Trypsin generally acts in a basic PH.
  • The optimum pH which helps in the activation of trypsin from trypsinogen is between 7.8 and 8.7.
  • As a result there is a huge difference between the pH of the stomach and that of the small intestine to activate trypsin.
