The principle behind the structure of the Eiffel tower is center of mass. The whole mass is eiffel tower is towards its center such that it can maintain itself in any condition.

1.  The importance of shape (design) at   high level design  - overall  design with less details

The importance of shape (design) at  more details   at a magnified view.    This is called the hierarchy of shape in the design of a structure.
The design of parts of the towers.

Shapes and sizes of beams and columns  at different levels, heights.   The cross-section of beams and columns used.
            overall shape at different altitudes

 a)   putting beams at the edge of a shape rather than at the center, as the shear stress occurs at the edges.

b)  distribution of  load/ stress equally among all the material in the structure.  This makes it optimally balanced.

The principle is similar to the pyramidal structure of temple towers in India.

c)  the cross section size  does not vary linearly with the altitude like in an Indian temple.  It varies as a curve.   this is the shape of the edge joining the pillar to the top of tower.   I mean the tapering.

2.   Optimization in structural design
    a)    use of material and holes among material  in the truss type of structure.
