50% for a fair coin, any number between 0 and 1 for a loaded coin.

this does require an honest person doing the flipping. For a larger coin, I find I can flick it up with my thumb, and it will happily go up in the air and either land in my hand, or on a table, and I can call it 90% of the time.

It looks as if I flipped it, but its really just rotating at a very high angle of pitch, and it never really turns over.
