Sucrose is a disaccharide, that is it is two monosaccharides glucose and fructose joined together by -O- bond. Hydrochloric acid catalyzes the hydrolysis (i.e. adding water) so that -O- becomes -OH HO- and the two components become separate. Because the resulting mixture has an opposite rotation of polarized light, it is called invert sugar.
