The role of bacteria in alimentary canal of cow:

The main compartment in the cow’s (and other ruminant animals) alimentary canal is the rumen. The rumen is largely inhabited by different microbes that include bacteria and also fungi and certain protozoans.  

The main function of these bacteria is to break down the food into sources of usable energy. These specialized bacteria produce enzymes that break down the cellulose of the plant cell walls into sugars and fatty acids, ferments carbohydrates to volatile fatty acids and gases.  

They also break down protein and non-protein sources of nitrogen to ‘amino acids’ and ‘ammonia’ to increase microbial protein content.
