The role of emulsifier in forming emulsion is as follows -

• The emulsion is a mixture of multiple liquids which cannot be mixed with each other in the normal conditions.

• The emulsifier work as the binding agent for those liquids and the stable emulsion mixture is created.

• So, basically the emulsifier prevents the seperation of the constituent liquids of the emulsion and without these emulsifiers ,the formation of the emulsion will be impossible.
