In the process of digestion, the saliva produced by salivary glands in the mouth helps the teeth and tongue to masticate and mix up the food thoroughly. Saliva contains an enzyme salivary amylase which digests 30% of the carbohydrates.The mucus in saliva helps in lubricating and adhering food particles into a bolus (a small ball of partially digested food). Then the bolus is conveyed to pharynx for further digestion. Lysozyme present in saliva acts as an antibacterial agent that prevents infection.
