The role of saliva in the digestion of food is saliva mixes with food in the mouth when we chews food and saliva contains digestive enzymes which converts carbohydrates in to maltose sugars. Saliva contains digestive enzymes and they helps to digest food in the stomach.

mucous helps in lubricating the buccal cavity and the pharynx and also helps in the formation of bolus.

Ptyalin (amylase) breaks down the polysaccharides into disaccharides, thereby helping in partial breakdown of carbs.

It also contains electrolytes and lysozomes which provide nutrients and immunity.
