If the buffalo milk is heated to less 30, 40 ,50 in ascending order the quality of the curd increases ascendingly, as at lower temp the curd will not be good to taste as the bacteria or enzyme required to convert the milk to curd takes a long time and due to this the entire milk may not be converted to curd.
