The human digestive system is highly efficient at breaking down proteins, starches, sugars, anything that's easily dissolved in water or by acidity, and, to a lesser extent, fats and lipids. It's completely unequipped to digest cellulose and barely puts a dent in it.  All plant material containing cellulose, which forms the cell wall in all plant cells, is indigestible by humans. That's why a lot of plant material comes out undigested. Material that can't be digested passes through the digestive system and helps push other material along, this is what's colloquially referred to as "dietary fiber" when talking about food content and it's an important part keeping your digestive system healthy.
