keeping food in the air thigt gets containers helps against rancidity when oxygen molecules come into contact with other substance from metals other than tissue they oxidze so when fats and oil oxidizes which changes it smell and taste since the food is completely sealed we can store it for a long time without spoiling.food remains fresh in the containers without losing it moisture to air
