Because iodine is necessary for the preparation of thyroxin by the thyroid gland. The deficiency of iodine causes a diseased condition called goitre characterised by a swollen neck.

Iodine is necessary in the synthesis of thyroxine......

Thyroxine is a hormone secreted by thyroid gland to regulate metabolism of carbohydrate, fats etc..

If Thyroxine would not be secreted it can result in swollen neck -Goitre..
