Most of the foods are kept in air tight containers so that the moisture present in the air cannot come in contact with the food. If the food comes in contact with the air rancidity occurs which spoils food and makes it unsuitable for eating.

helllooo!!
It depends on the type of food item to be stored because sometimes cooked food (like vegetables) kept in air tight containers get spoil. Secondly, the air tight container creates a vaccum condition in the container by acting as a barrier between the atmosphere and the food.
